Ingredients:  
2 cups milk
1 cup cooked rice
2 eggs, separated
1/2 cup sugar
1/4 teaspoon salt
1/2 teaspoon vanilla

Directions:
Directions:
Combine milk and rice in top of double boiler and heat through.
Combine egg yolks, sugar and salt.
Stir rice mixture slowly into egg yolk mixture, then pour back into the double boiler and cook over boiling water until thick.
Beat egg whites until stiff and fold into hot mixture.
Stir in vanilla
Serve warm or cold
