5 large carrots peeled and coarsely grated or cut into matchsticks
2 medium apples (we like Fuji or Gala)
¼ cup toasted slivered almonds
½ cup raisins
3 Tbsp. lemon juice
2 Tbsp. olive oil
1 tsp. ground cumin
¼ tsp. ground coriander
½ tsp. ground cinnamon
¼ tsp. freshly ground pepper, if desired

Directions:

In very large bowl, combine all ingredients and cover.

Refrigerate for ½ hour before serving.

Bring salad back to room temperature and serve.
