1 2/3 Cup of White Sugar
2 Sticks of Butter
5 eggs
2 Cups of Cake Flour
Pinch of Salt
1 TBS of Vanilla Flavoring

Preheat oven to 350º
All ingredients should be at room temperature.

Using a stand mixer:
Cream Butter and Sugar together until fluffy and light, 5-6 minutes.

Add eggs one at a time, making sure that the mixer is turning for 45-60 seconds between eggs. Crack eggs into small bowl before adding to stand mixer, to ensure that there is no eggshell or a bad egg.

Add the pinch of salt to the cake flour and then add to mixer by spoonfuls.
Make sure that you scrape down the sides of the mixer with a rubber spatula so that the bottom of the mix gets incorporated.

Add the vanilla flavoring to the mixer.

Beat the mix only until all cake flour in incorporated. Do not overmix the batter at this point.

Grease and flour a medium size tube pan.

Layer the batter in the tube pan evenly. Do not tap the tube pan or press down on the batter except to lightly smooth out the top.

Bake for 1 hour, checking at 55 min with a cake tester or thin skewer.
If the skewer has a wet look to the batter, then bake another 5 minutes and check again.

Let cake cool for 10 minutes, then turn onto a plate or cake platter. Do not cover the cake until it has completely cooled.
When cooled, cover and do not refrigerate.

This was my mother's (Louise Hobbs Cook) pound cake recipe. I am pretty sure that it was handed down from her mother (Mary Frances Porter Hobbs)

It lasts for several days and slices well.
The top of the cake may crack with baking, but that was my favorite part!
