Directions:Preheat oven to 350º F. Grease an 8" square baking pan ( I line with foil for easy removal and cutting). Use an electric mixer to cream together butter ad sugars until light and fluffy. Beat in egg and vanilla. Set aside. Meanwhile, whisk together flour, graham cracker crumbs, baking powder, and salt. Slowly add flour mixture to the creamed butter mixture until combined.
Divide dough in half and press half of dough into an even layer on the bottom of the prepared pan. Press the remaining dough between two pieces of wax paper to as close to the size of the pan as possible and place in frig to chill until ready to place. Place chocolate bars over dough, breaking and maneuvering to cover as completely as possible, but try to keep the pieces as large as possible to make the next step easier. Spread the chocolate with marshmallow crème, placing blobs of it on the chocolate then spreading around as carefully as possible.
Place remaining chilled dough in a single layer on top of the fluff, pressing around to reach edges and cover the fluff completely. Bake for 30-35 minutes, until lightly browned. Be sure to cool in pan completely before removing to cut into bars (the chocolate and marshmallow tend to stay soft for a while - still taste good a little warm but very messy!). I find a large sharp pizza cutting wheel worked well. Makes 16 - 2"x2" squares. These are pretty rich so may even try to cut 1"x2"! |
