1 cup chopped dates
1 teaspoon baking soda
1 1/2 cup boiling water
1 cup brown sugar
4 tablespoons butter
1 egg
1 teaspoon vanilla
2 1/2 cups all purpose flour
1 teaspoon baking powder

Directions:
Directions:
Sprinkle baking soda over the chopped dates.
Pour boiling water over the dates and let cool to room temperature.
In a separate bowl cream brown sugar and butter.
Add egg and vanilla and blend well.
Add date mixture and stir. Add flour and baking powder to wet ingredients and mix well. Grease the loaf pan and line with wax or parchment paper that has been greased on the top side.
Pour the batter into a greased loaf pan.
Bake 45 minutes to 1 hour at 325 º F. Let cool in the pan for five minutes; then turn out on a wire rack, remove the paper, and leave to cool completely
