3/4 C Quick Cooking Oats (or slightly grind/blend old fashioned oats)
1 1/2 plus 2 T buttermilk (or milk, to which you've added 1 T vinegar)
3/4 C flour (whole wheat or white)
1 1/2 t Baking Powder
3/4 t Baking Soda
1/2 t Salt
1/2 t Cinnamon
1 Large Egg lightly beaten
2 T Melted Butter
1 T Sugar (brown sugar is nice)

Directions:

Soak oats in 3/4 cup of (butter)milk for 10 minutes.

Meanwhile, whisk together flour, baking powder, baking soda, salt, and cinnamon

Stir egg, butter, sugar, remaining 3/4 cup plus 2 T buttermilk and oat mixture into dry ingredients until combined.

Heat griddle over medium heat until hot and brush with oil. Working in batches, pour 1/4 cup of batter per pancake onto griddle and cook until bubbles appear (about a minute). Flip and cook about a minute on the other side. Serve with sliced bananas, apple or pear sauce, or syrup.
