2 T. olive oil
4 t. curry powder
4 skinless boneless chicken breasts or 8 thighs or a combo of the two
1 c. plain lowfat Greek yoghurt (Trader Joe's) – regular yoghurt is fine if you can't find the Greek style
½ c. finely chopped seedless cucumber
1/3 c. chopped green onions
1/8 t. cayenne pepper (or to taste)
salt and pepper to taste

Marinate chicken with oil and curry in a large ziploc bag for at least 1 hour up to overnight. Combine remaining ingredients and stir well to mix. Season to taste. Refrigerate until served. Grill chicken until done. Serve with cucumber sauce and rice pilaf or plain rice.

This is a recipe my mom made a lot in the Summer - she found it in a Parade Magazine. She always used a curry powder from a place in Tortola, BVI called Sunny Caribbee: sunnycaribbee.com/products/caribbee-curry, although I use other mixes...Penzey's has some great ones!
