1 - 1 1/2 lb. stew beef
2 tbsp. oil
Beef broth
4 Carrots, chopped*
4 Potatoes, chopped*
1 lg. can peas
Salt
Black pepper
1/2 tsp. marjoram
1/2 tsp. thyme

To thicken gravy: 2-3 tbsp. corn starch mixed with an ounce or two of water

* Add more or less depending on your own preference.

Cut beef into bite size pieces. Brown the beef in a large pot with the oil. Add the beef broth enough to cover the beef and simmer for at least 1 1/2 hours. Add carrots, potatoes, peas, salt, pepper, marjoram, thyme, and enough beef broth or water to cover all. Bring to a boil. Reduce heat and cook until carrots are tender (about 30 minutes). Slowly stir in the corn starch and water mixture until gravy thickens. If gravy is too thick add some water. If gravy is too thin add more corn starch and water.
