1 lb. cooked elbow pasta (or any small pasta)
4 tbsp. butter
1/3 heaping cup flour
1/2 tsp. salt
1/4 tsp. black pepper
16 oz. package of Velveeta cheese cut into chunks
2 cups milk
1/2 cup breadcrumbs (optional)
1-2 tbsp. melted butter (only needed if using bread crumbs)

Preheat oven to 350º

Cook pasta according to package directions, rinse and drain.

In a medium sauce pan melt butter over medium heat. Remove from heat and add flour, salt, and pepper. Blend until smooth. Return to heat and add milk. Stirring constantly cook until sauce thickens and begins to bubble. Add in Velveeta and continue stirring constantly until cheese is melted. Remove from heat.

Place pasta in a large casserole dish. Slowly pour cheese sauce over pasta and mix. If you desire, cover with a mixture of breadcrumbs and melted butter.

Place uncovered in 350º oven for 20-25 minutes or until it begins to bubble. If using breadcrumbs cook until it is bubbly and breadcrumbs start to brown.
