6 fresh sardines
1/2 cup flour
2 cloves garlic
1/4 cup white wine
2 tbsp. olive oil
1/2 tbsp. butter
1 lemon
oregano
parsley
salt and pepper

Directions:
Directions:
1. clean sardines with cold water
2. season flour with salt and pepper
3. dredge sardines in flour
4. In a sauté pan add olive oil and let it get hot
5. sauté fish to brown both sides
6. remove oil
7. mince garlic and add to pan let cook just a few seconds do not brown
8. deglaze with white wine let simmer about 3 minutes until wine reduces and alcohol burns off
9. juice from 1 lemon
10. add a little water.
11. add butter
12. add fish back in pan sprinkle with herbs. turn fish in pan 2 times
Sardines are very small should be completely cooked within about 5 minutes.
