2 cups green split peas
6 cups water
4 cups beef broth
1 ham bone
1 rib celery
1 medium onion
3/4 cup croutons

Directions:
Directions:
Put peas in strainer and run cool water over. Stir and rinse again. Place drained peas in sauce pan. Carefully add water and beef broth and stir. Add ham bone. Rinse celery under cold water, break into large pieces, add to pan. Peel onion and add whole to pan. Heat soup to boil over medium heat, then reduce heat to med low and simmer uncovered for 1.5 hours. Stir occasionally. Remove onion and celery pieces with slotted spoon and throw away. Remove ham bone, cool. When cool pull meat off bone and return meat to soup. Serve with leafy green salad and crusty bread.
