1 Box of Lasagna noodles
1 jar of pasta sauce
1 12-16 oz jar of roasted red peppers, drained and diced
1 8 oz package of fresh or packaged mozzarella cheese.
1 large bucket of ricotta or cottage cheese (32oz)
2 LG eggs
1 family size bag of spinach

Directions:

Pre-heat oven to 350º
Place spinach and a splash of butter/Canola oil in a large pan to wilt, drain once wilted, as it holds a ton of water, set aside and allow to cool.
Whisk together both eggs and ricotta or cottage cheese.
Once the spinach is cooled, mix in with cottage cheese/ricotta and egg mixture.
Grate or slice your mozzarella as desired.

Assembly:
Sauce on the bottom of your lasagne dish 9x13, then a layer of noodles, then begin alternating with cheese/spinach mix, then roasted peppers and sauce. Be sure to put at least one layer of mozzarella in-between the noodles. Save about half of your mozzarella to place over top of the last layer of sauce on the very top.
Place in oven until
