3 lbs diced rhubarb
3 lbs granulated sugar
1 1/2 oz fresh ginger root (bruised) or preserved ginger
2 small lemons

Directions:
Directions:
Cut rhubarb into small pieces. Put into a heavy bottomed saucepan with sugar. Heat slowly until sugar is dissolved, Stir continuously. Add bruised ginger tied in muslin or cheesecloth, juice and finely grated rinds of lemons. Boil until mixture thickens and a small amount sets when tested in refrigerator. Remove ginger and pour into sterilized jars. Seal and cool.
