3 lb fully ripe peaches
5 c sugar
1 c slivered blanched almonds
1/2 c seedless raisins
1/4 tsp grated lemon rind
2 tbsp. lemon juice
1/4 tsp cinnamon
1 box Certo fruit pectin crystals
1/2 c brandy

Directions:
Peel pit and crush enough peaches to make 3 1/2 c. Measure sugar and set aside. Mix together crushed peaches, almonds, raisins, lemon rind, lemon juice, cinnamon, and fruit pectin crystals in a large saucepan. Place over high heat and stir until mixture comes to a full boil. Stir in sugar at once. Bring to a full rolling boil one that can't be stirred down. Boil hard one minute stirring constantly. Remove from heat and immediately stir in 1/2 c brandy. Skim off foam with metal spoon. Stir and skim for five minutes to cool slightly to prevent floating fruit. Ladle quickly into jars. Seal at once with 1/8" melted paraffin wax. Let paraffin harden. Cover with sterilized lids.
