50 Ritz Crackers
15 Graham Crackers
8 Egg Yolks
1 C. Sugar
2 1/2 C. Cooked Rhubarb
1 Pkg Lemon or Cherry Jello
1 C. Sugar
8 Egg Whites
1 C. Walnuts

Directions:
Directions:
Cook and partly cool rhubarb. Roll out crackers together until fine and work in butter and chopped nuts with large fork. Put half in large cake pan. Beat egg yolks well and add 1 cup sugar and rhubarb. Cook until thick, stir in Jello until dissolved and cool.

Beat egg whites with 1 cup sugar, adding gradually, fold in fruit mixtures using a large bowl. Pour on top of crumbs with nuts, add rest of crumbs. Chill thoroughly before serving.

This recipe is hand written in my Mom's writing. Makes me want to try it sometime soon. I would probably cut back on some of the sugar, especially since Jello contains sugar as well.
