2 cups of flour
1 1/2 cups sugar
2 teaspoon baking soda
2 teaspoon cinnamon
1/2 teaspoon salt
2 cups grated carrots
1/2 cup coconut
1 apple grated
3 eggs
3/4 cup oil
1 1/2 teaspoon vanilla

Directions:
Directions:
Mix dry ingredients and fruit together in bowl. In separate bowl, beat eggs, oil, and vanilla, add to dry mixture. Stir until moist and all dry ingredients are thoroughly mixed in.
Fill muffin cups 2/3 full.
Bake for 20 to 25 minutes at 350ºF.
Makes 18 muffins
