1 cup pumpkin puree
2 eggs
1/2 cup rolled oats
3 cups whole wheat flour
3 Tbsp. peanut butter
1/2 tsp cinnamon
Directions:
Directions:
Preheat oven to 350 degrees. Mix pumpkin puree and eggs until well combined. Mix in cinnamon, oats and peanut butter. Gradually add flour until well combined. Divide dough in half and roll approximately 1/4 inch thick. Cut into shapes with small cookie cutters, or use a pizza cutter to slice into square or diamond shapes. Place on parchment lined baking sheets and bake 30 minutes, or until quite dry and golden brown. These will crisp up as they cool.
