Group A ingredients:

2 C. chopped canned Tomatoes drained
1/2 C. Chopped Onion
1/2 C. Chopped Green Pepper
2 T. Tomato Paste
1 T Parsley
1 Bay Leaf
1 Tsp. Italian Seasoning (Basil & Oregano)
2-4 Garlic Cloves Minced

Group B Ingredients
2 C. Brown Rice
8 oz. Mashed Tofu
4 oz. Grated Cheddar Cheese
4 oz. grated Parmesan Cheese

Directions:
Directions:
In large skillet, combine Group A ingredients, cook for 20 minutes over medium heat, discard bay leaf and stir in cooked rice.

Press rice mixture into bottom and side of 8 inch pie plate or small square baking dish. Spread layer of mashed tofu, sprinkle with two cheeses mixed together.

Bake 350º for 25 minutes.

This was originally a Weight Watches recipe, so very low calories, but had only 1 oz of each cheese. I always use 4 oz. of each cheese instead of the stingy 1 oz. My kids loved this dish growing up, and it's a great vegetarian dish!
