3 eggs
2 c white sugar
1 c oil (corn oil)
2 tsp vanilla
2 c unpeeled grated zucchini
2 c all purpose flour
1 tsp baking soda
1/2 tsp baking powder
1 tsp salt
2 tsp nutmeg
2 tsp cinnamon
1 c chopped nuts or raisins or 1/2 c of each

Directions:
Directions:
Beat together eggs, sugar, oil, vanilla. Stir in zucchini and mix well. Sift dry ingredients and blend in. Fold in nuts (and raisins). Grease and flour 2 loaf pans and fill. Bake at 350ºF for 1 hour. Glaze with lemon juice and sugar if desired.
