3 large eggs
1 cup sugar
1 cup sour cream
1/2 cup oil
2Tblsp lemon zest
2Tblsp lemon extract
1 1/2 cups flour
2 tsp baking powder
1/2 tsp salt

icing: 1cup powdered sugar and 3 tbsp. lemon juice

Directions:
Directions:
Preheat oven to 350

in Large bowl add eggs sugar and sour cream. Whisk until smooth. drizzle in oil to combine while whisking. Add lemon zest lemon extract and whisk to combine.
Add flour, baking powder, and salt. Stir until just combined. Don't over beat. Some lumps will still be present, but that's Okay.
Pour into loaf pan for 50-52 minutes
Last 5-10 min of baking, tent pan with foil.
Cool completely

Lemon glaze
1 cup powdered sugar
3 Tblsp lemon juice or as necessary
For consistency
