1 lb. feta cheese, crumbled
8 oz. cream cheese, softened
1 1/2 cups half & half
1/4 cup lemon juice
2 tsp. white pepper
3 tbsp. olive oil
1/8 cup chili oil
1 roasted red pepper, chopped

Directions:
Directions:
In a large bowl, beat cream cheese with a mixer. Add feta cheese, half & half, lemon juice and pepper; mix slowly. Add the olive oil, chili oil and roasted pepper. Mix until well-incorporated. Adjust seasoning if needed.

Many years ago, I took a class given by the head chef from Papagus Restaurant. Whenever I ate at the restaurant, I would always order their spicy feta cheese spread. He did not show us how to make it. So after class I asked if he would give me the recipe. He sent it to me the next week. I make it often and think it is just as good as the restaurant makes. You might want to cut the recipe in half, it serves a crowd!
