2 boxes fresh mushrooms thickly sliced
1 yellow pepper
1 red pepper
1 can baby corn bits
1/2 small red onion thinly sliced
Dressing:
1/4 c. oil
1/4 c. vinegar
3 T. sugar
1 t. salt
pepper to taste
1 cube frozen parsley

Directions:
Directions:
Combine all salad ingredients in a large bowl. Separately, mix dressing ingredients. Pour dressing over vegetables and mix. Refrigerate and allow to marinate for at least 3 hours. Serve chilled.
