5 apples
2 tsp cinnamon
2 1/2 cups sugar plus 1 Tablespoon--Mom used 1/4 cup plus 1 Tablespoon for apples and
1/2 cup honey in cake
3 cups flour
1 Tablespoon baking powder
2 1/2 tsp. vanilla
1 cup oil
4 eggs
1/2 tsp. salt
1/3 cup orange juice
1/2 cup raisins
1/2 cup chopped nuts

Directions:
Directions:
Peel and thinly slice apples. Toss with cinnamon and 1/4 cup plus 1 Tablespoon sugar. Set aside.
Combine flour, baking powder; set aside 1/4 cup. Add remaining flour to remaining sugar or 1/2 cup honey, oil, eggs salt, juice and vanilla. Beat until smooth, Toss raisins and nuts with reserved flour. Add with apple mixture to batter; stir only until mixed. Pour into greased and floured tube pan. Bake at 350º 1 1/2 hours to 2 hours.
