4 tbsp. butter or margarine
2 tbsp. of salad oil
2 medium sized onions, peeled and finely chopped
2 cups of canned tomatoes (or 1 large can)
1 tbsp. of white sugar
1/8 tsp. salt and black pepper
¼ tsp. basil
1 tbsp. cornstarch
1 tbsp. cold water
1 full package of egg noodles
3 c. of finely grated old or medium cheddar cheese
½ to ¾ of a cup of pimento stuffed olives, sliced

Combine 2 tbsp. butter and salad oil in pot over low heat.
When butter has melted add onion. Cook over low heat stirring frequently for 15-20 minutes or until onion begins to brown.
Add tomatoes, sugar, salt, pepper and basil. Boil contents of pan. Cover pan and reduce heat. Simmer for 15 minutes.
Blend cornstarch in cold water until mix is smooth. Add about ½ c. of tomato mixture and blend thoroughly. Stir this cornstarch-tomato mix into remaining hot tomato mix in pan. Cook over moderately high heat stirring constantly until tomato sauce is thick.
Remove from heat.
Cook noodles according to package directions.
Drain and rinse with hot water.
Drain again thoroughly and place noodles in a large bowl.
Add remaining 2 tbsp. of butter and 2 c. of cheddar. Toss lightly.
Add tomato sauce and olive slices. Toss again.
Put noodle mixture into greased casserole dish.
Sprinkle remaining 1 c. of grated cheddar cheese over top.
Bake in preheated oven uncovered at 350° for 30-45 minutes until noodles are bubbling hot and the top is nicely browned.

Good with green salad and dinner rolls.

Here is one of your all-time favorites…mom’s noodle bake casserole. Remember that when this was served, it was so good that a second helping was a given even before we had finished our first serving?
