3 c flour
1 T syrup or brown sugar
1 c raisins or other fruit
dash nutmeg or cinnamon
Pour 1 T boiling water over 1 tsp baking soda
3 T butter
1 egg
1/2 c milk
Zest from lemon or orange

Directions:
Directions:
Mix all ingredients together. Scald a pudding cloth and flour generously on both sides. Place the cloth over a large bowl and push it into the bowl from the center to farm a lining. Add mixture, then tie up the cloth, but not to tightly. Have a pot of water boiling. Put a wooden spoon through the cloth beneath the knot to suspend in pot of boiling water. Boil for 3 hours.

Another of gramma Stout's favourites she was famous for. She was getting on in years when she wrote the recipe out for me and some of the ingredients are missing, so I have researched making a "duff" and hopefully have come close to how she made it.
