1 lb lean ground beef, browned and fat drained
1 lb Hot Italian Sausage, casings removed, browned and fat drained
1 large onion, chopped
1 bell pepper, chopped
3 stalks of celery, chopped
3-4 cloves garlic, minced
1 (28 oz) can diced tomatoes, undrained
1 (16 oz) can tomato sauce
8 oz mushrooms, sliced
1 T. Italian Seasoning, or to taste
2 bay leaves
1 t. fennel seeds
2 t. oregano, or to taste
2 t. dried basil, (Or best, 1 t. dried and handful fresh basil, Julienne)
1 T. black pepper
1 t. salt, or to taste
1 t. parsley
1 t. sugar

Directions:
Brown ground beef, drain fat and set aside. In same skillet, brown the Italian sausage after the casings are removed, and chop into bite size crumbles. Drain fat. In same skillet, add the onions, garlic, and mushrooms. Saute for several minutes until the vegetables soften. Transfer meats and vegetable mixture to a large pot. Add all other ingredients and simmer on the stove for several hours. Serve over the pasta of your choice.

Hot Italian sausage is not hot. The teaspoon of sugar helps temper the bite of the tomatoes.
