12 c chopped tomatoes. (I use my food processor and don't peel them)
2 c chopped yellow banana peppers
4 c chopped green peppers
6 c chopped red peppers
4 c chopped yellow peppers
1 c chopped jalapeno peppers
3 c chopped onions
2 1/4 vinegar
1 bulb garlic, peeled and chopped (in food processor with onion)
2-13oz cans hunts tomato paste
2 1/2 T sugar
3 T pickling salt
3 tsp paprika

Directions:
Cook, stirring often and simmering for 30 minutes. Put into hot sterilized jars and seal. Makes 15 pints.

This makes a very mild salsa. I like mine hotter and add an assortment of hot peppers. I make salsa in the early fall when we have an abundance of local peppers.
