Crust:
4 tbsp. butter
1/3 c firmly packed light brown sugar
1 c all purpose flour
1/4 c flaked coconut

Topping:
2 large eggs
1 c firmly packed light brown sugar
1 tbsp. grated lemon rind
1/4 c lemon juice
1/4 tsp salt
1 1/2 c raisins
3/4 c flaked coconut

Directions:
Directions:
Prepare Crust: Line the bottom of a 9" square baking pan with a sheet of foil long enough to cover 2 opposite sides of the pan and extend slightly beyond them. Butter foil. In a medium bowl, cream butter and sugar and gradually blend in flour and work in coconut and press over bottom of the prepared pan. Bake in a preheated 350ºF oven until edges brown lightly (about 12 min). Set aside at room temperature. Leave oven control at 350ºF

Prepare Topping:
In a medium bowl, beat eggs until foamy and stir in sugar, lemon rind, lemon juice, salt, raisins and coconut. Spread over crust. Return to the 350.ºF oven and bake until top is lightly browned (20 to 25 min). Place on wire rack to cool and with a sharp knife loosen edges. Grasp foil and lift out of pan. On a cutting board with a sharp heavy knife cut into squares.
