2 c finely chopped red peppers
5 1/2 c sugar
2/3 c red wine vinegar
1/2 c water
1/2 c lemon juice
Tabasco sauce to taste (12-15 drops)
1 pouch liquid Certo

Directions:
Directions:
Take seeds out of 2-3 red peppers. Add one hot pepper for more heat. Chop fine in food processor or blender. Place peppers, sugar, vinegar and water in large dutch oven over high heat. Heat and stir until it boils. Add lemon juice and certo, stirring well. Bring to a full rolling boil and boil 1 minute. Pour into clean, hot sterilized jars and seal.

Use as a condiment to pork, chicken or turkey. Also with cream cheese on a cracker.
