1 med onion
1 2lb bag hashbrowns
1 can cream of mushroom or cream of chicken soup
1 8oz jar cheese whiz
1 8oz carton sour cream
2 sticks butter
1 cup crushed cornflakes or Ritz crackers

Directions:
Directions:
Preheat oven to 325º.

Thaw potatoes and soak up water with a paper towel. Place potatoes in a greased 9x13 baking dish. Add salt and pepper to potatoes and grate the onion over the potatoes.
Melt 1 stick butter and pour over potatoes. Mix cheese whiz, soup and sour cream together and pour over potatoes. Add crushed cornflakes or Ritz crackers over top of casserole. Melt 1 stick butter and pour over cornflakes or Ritz crackers.
Bake for 35 minutes or until bubbly.

This is very good. Tastes like the hashbrown casserole you get at Cracker Barrel. I got this recipe from Mary Jane Mitchell. Mary Jane makes this recipe a lot and it could be divided into two smaller containers...cook one and freeze the other for later.
