1/2 c diced onion
1/3 c diced green pepper
1/4 lb sliced fresh mushrooms
2 tbsp. butter
1 1/2 c cooked rice
8 oz carton peach-pineapple cottage cheese
dash pepper
2 large slices hem (center cut) 1" thick
1/4 c apple jelly

Directions:
Directions:
Heat oven to 350ºF. Saute onion, green pepper and mushrooms in butter for 5 min. Remove from heat. Combine sautéed vegetables, rice, cottage cheese and pepper. Mix well. Spread on 1 slice of ham placed on a large piece of foil. Arrange second slice on top of filling. Bring foil up around ham slices to encase them completely but loosely. Bake 30 to 40 min. Open foil and spread jelly on top slice. Bake 30 min longer or until ham is fork-tender and glazed. Place on large heated platter. Garnish with celery tops. Serve with casserole roasted potatoes and kernel corn combined with julienned carrots.
