14 to 16 rib crown roast of pork (7 to 9 lb)
bottled hot mustard
seasoned salt and thyme
sausage rice stuffing

Directions:

Rub roast all over with mustard. Place on rack in an open roasting pan with rib ends up. Sprinkle with salt and thyme. Cover each rib end with a small piece of foil. Roast in a 325ºF for 2 hours. Remove from oven and fill center with stuffing. Cover stuffing with a small piece of foil. Insert meat thermometer in meat so it doesn't touch any bone. Cook the roast about another 1 1/2 hours or until meat thermometer registers 170ºF to 175ºF. Place roast on heated platter. Surround with glazed apple sections and watercress. Serve with potatoes and turnip whipped together and cauliflower.

Glazed Apples - Cut unpeeled cored apple into 8th's. Simmer in a simple syrup (1 c water to 1 c sugar) until almost tender (about 5 min).
