Swiss chard stems (chopped into inch pieces)
1-2 eggs
salt
flour
Oil to fry

Directions:
Directions:
Cook stems in boiling water until tender (about 10 min) Leave about i/2 cup of water for batter.
Let cool. Then add slightly beaten eggs, Add about 1/2 tsp salt and enough flour to make a pancake-like batter. Fry in 1-2 " of oil until light brown, turning only once. Drain on paper towels and salt lightly.
