Dry Bean Mixture:
1/4 c each: Black Beans, Navy Beans, Red Beans, Pinto Beans, Black eyed Peas, Split Peas, Garbonzo Beans, Baby Lima Beans, Lentils, Barley
Water to cover beans
1 tbsp salt
3 qt Water
4-5 Ham Hocks
2 Bay Leaves
1/2 tsp Thyme
1 qt Tomatoes
2 med Onions chopped
1 lg Green Pepper, chopped
2 cloves Garlic
6 Ribs Celery, chopped
1 tbsp Red Pepper
Green Onions, chopped
1/2 Frying Chicken
1 lb Smoked Sausage

Directions:

Wash dry bean mixture; drain. Add water to cover and salt. Soak over night; drain.

Add 3 qt water, Ham Hock and bay leaves to drained beans, Cover and simmer 3 hrs.

Add, tomatoes, onions, green pepper, garlic, celery, red pepper and green onions and simmer uncovered for 1 1/2 hrs.

Add chicken and sausage; cook until chicken is done. Remove chicken from bones and return to pot. Add 2 tbsp parsley about 10 minutes before serving.

The first time I heard of this was at Church. One of the ladies suggested we mix the dry beans and package them to sell as a fund raiser during an indoor yard sale. So we all pitched in and bought our bags of beans and measured them quarter cup at a time and then attached the cooking instructions and sold them along with many bowls of the soup that we had cooked in the kitchen. It was a huge success and I have loved it every since. It makes a boat load of soup so its really good for big gatherings. It also freezes well.
