5 eggs
1/2 cup water
3/4 tsp salt
3/4 cup plus 1 tbsp flour
1 and 1/2 cup ricotta
1 and 1/2 cup grated mozzarella cheese
1/2 cup tuma cheese
1 cup cooked and sliced Italian sausage (baked at 350 degrees for 1 hour)

Mix water and eggs with a fork or whisk. Then mix in flour. Then add remaining ingredients.

Heat vegetable oil in 10" fry pan to coat bottom and sides. Add frittata mixture and cook at medium heat for 9 min.

Put plate on top and turn over (do this over the sink), Then slide back into pan. (May need to add a little oil before you slide it back into fry pan), Cook 9 more minutes.

Serve in wedges. (8 pieces)

This is served every Easter as an Italian tradition. My grandmother Angeline brought this recipe from Italy.
All the preparation (cooking and slicing the sausage, cutting the tuma cheese into cubes, and grating the mozzarella) can be done the day before.
