3 C peeled potatoes
1 celery stalk
1 medium onion
3 1/2 C chicken (or vegetable) stock
2 leeks
2 C milk
1 T butter
1/2 C cream
Salt and Pepper to taste

Directions:
Directions:
Slice potatoes and leeks, chop celery, slice onion. Melt butter in large pan, add vegetables and stir over medium heat until they have absorbed butter but are not browned. Add stock, salt and pepper, bring to a boil, the simmer 1/2 hour or until vegetables are tender. Sieve or blend in electric blender, return to pan and add milk. Reheat soup. Stir in cream just before serving.
