2 c Wesson Oil
21/2 c Swan's Plain Cake Flour
11/2 c Sugar
1 c Buttermilk
2 Eggs
2 tsp Cocoa
1 tsp Vinegar
1 tsp Soda
1 tsp Salt
2 oz Bottle Red Food Coloring
1 tsp Vanilla
Cream Cheese Frosting
1 box (10x) Confectioners Sugar
1 8 oz pkg Cream Cheese, softened
1 stick Butter
1 c Chopped Pecans
1 tsp Vanilla

Directions:
Directions:
Sift flour, soda, salt, sugar and cocoa. Mix Wesson oil, buttermilk, vinegar, eggs, vanilla and red food coloring. Stir in dry ingredients. Mix well. Pour into 3 or 4 round baking pans (8 inch). Bake at 350º until toothpick inserts in center and comes out clean. Cool completely and ice with cream cheese frosting.

Cream Cheese Frosting: Cream together butter and cream cheese. Add vanilla, fold in confectioner's sugar and pecans. Refrigerate until cake is cool. Ice cake and refrigerate leftovers.

This recipe was given to me by my mother in law, Corrine Mixson. She made it every Christmas and it was always our favorite. One day as the Holiday's approached I asked her for her recipe and she went to her recipe box and came back with it written on a 3x5 card. I still have it to this day. This one and many others I have in hers, Mom's and Woo Woo's hand writing are priceless.
