1 lb. uncooked chicken breast
6 oz. cooked spaghetti
6 oz. Velveeta, cubed
1 can light Cream of Mushroom soup
1/2 can water
1/2 c. Green pepper, chopped
1/2 c. red bell pepper, chopped
1 c. fresh sliced mushrooms
2 cloves minced garlic
Olive oil

Directions:

Sauté chicken in 2 T. of olive oil until cooked tender. Remove from skillet and sauté peppers, onions and mushrooms until tender. Add garlic to veggies and cook about a minute more and remove veggies from skillet. Cook soup, water, and cheese on low until cheese is melted. Combine spaghetti, chicken, veggies, soup and cheese and pour into baking dish. Bake at 375º covered or in crock pot until heated through. Add grated cheese to the top after baking and return to the oven uncovered until cheese is melted.
