Ingredients:

1 lb. of red beans (preferably Camellia brand)
1 medium yellow onion, peeled and chopped
1 bunch green onions, chopped
7 cloves garlic, peeled and chopped fine
1/2 cup parsley
1 rib celery, chopped
1/2 cup ketchup
1 green sweet bell pepper, seeded and chopped
1 Tbsp. Worcestershire sauce
2 tsp. Tabasco
2 whole bay leaves
1 tsp. thyme leaves
Salt and pepper to taste
1 lb. of smoked sausage, (Kielbasa type) cut in 1-inch pieces
1 lb. Pickled Pork ( I can't seem to find pickled pork in KS, so I use 1 lb. of whole ham pieces with the ham bone)
Cooked rice

Throw everything in a pot with water and cook for at least 3 hrs.

When our family moved to New Orleans one of the first dishes we had was red beans and rice. We loved it so much and I knew it would be a dish I would have to learn to make myself. I dabbled here and there attempting to make the dish, but it never really tasted, "authentic". Then, one day after church, Mr. Henry Pepper (now deceased) handed me a handwritten card with his mother's recipe. I still use Mrs. Pepper's recipe today and it's a treasured piece of our memories of New Orleans.
