4 c. Black-eye peas
1 medium size ham hock
1 medium size onion, chopped
2 stalks celery, chopped
1 small bay leaf
6-7 c. Water (add water depending on how juicy you want it)
1 tsp. Salt
1/2 tsp. Pepper
1 c. Uncooked rice

Directions:
Directions:
Put peas, ham hock, onion, celery, and bay leaf in saucepan or pressure cooker and add water and seasonings and cook for 5 min. in a pressure cooker or simmer in a pot until peas are tender. Cook rice according to package directions. Combine peas, rice, ham cut from the bone and minced and liquid from peas. Simmer for a few minutes to combine flavors.

I prefer to put the rice into each bowl and add peas and soup on top. Otherwise the rice will soak up all of the juice.
