3 eggs
1 Cup Sugar
2/3 cup cooked pumpkin
1 tsp. lemon juice
3/4 cup flour
1 tsp. baking powder
2 tsp. cinnamon
1 tsp. ginger
1/2 tsp nutmeg
1/8 tsp salt
1 1/2 cups 10 x sugar
2 3 oz packages cream cheese (softened)
4 Tbsp. butter, softened
1/2 tsp vanilla
Directions:
Directions:
Beat eggs in large bowl at high for 5 minutes
add: Sugar gradually beating constantly
Stir in pumpkin and lemon juice
Fold in next 6 ingredients
Spread on to greased and floured 10 x 15 baking pan
Bake at 375 degrees for 15 minutes
invert onto towel sprinkled with 1/2 cup 10 x sugar and roll as for jelly roll
let cool
Combine remaining 1 cup 10 x sugar cream cheese, butter and vanilla mixing well
unroll cake and spread with cream cheese mixture
re roll and chill
