2 c. unbleached all-purpose flour
1 c. sugar, plus extra for sprinkling
1 tbsp baking powder
½ tsp salt
¼ c. vegetable oil
1 large egg, lightly beaten
1 c. milk
2 c. fresh, wild blueberries, washed

Directions:
Directions:
Preheat oven to 400 º. Line 12 large muffin tins with papers liners.
In a large bowl, sift together the flour, sugar, baking powder and salt. Gently stir in the oil, egg, and milk, taking care not to over mix the batter. Gently fold in the blueberries.
Fill the muffin tins ¾’s full with batter. Sprinkle the tops of the muffins with extra sugar and bake for 20-25 minutes, or until lightly browned
