2-3 # Spanish onion
1/4 # butter unsalted
1/2 cup dry sherry - do not use cooking sherry
8 cups water
3 generous tbsp. Minors beef base
4 oz shredded Gruyere cheese
6 slices of French bread

In a stock pot melt butter and sauté onions on medium heat to carmelize. should take about 20 minutes. Stir occasionally
deglaze pan with sherry- let simmer for about 5 minutes
add water and beef base. simmer about 30 minutes.

salt pepper to taste. The base contains salt -- be careful

In a crock or any bowl you can put under the broiler- add soup - bread- and cheese.

Put under broiler until cheese is melted and golden.
