1 lb or so boneless chicken breasts - cut into medium sized pieces (bigger than bite size)
2 eggs
Flour
Panko crumbs
Olive oil
2 cloves garlic minced
1 onion chopped
1 container mushrooms, sliced
1 green pepper chopped
2 tomatoes
1 large can of crushed tomatoes
1 can no salt diced tomatoes
1/2 cup tomato juice
small can tomato paste
Bay leaf
Pepper
Thyme (or Italian seasoning)
Basil
Marjoram

Mozzarella Cheese
Spaghetti or linguine

Directions:

Beat eggs lightly
Mix some flour and panko crumbs and pepper in a small bowl
Drag chicken pieces in egg then the flour/panko
Cook chicken in skillet in some olive oil

Cook onion, garlic, mushrooms, peppers in left over oil

Combine all tomato ingredients, bay leaf, thyme, basil, marjoram (or Italian seasoning) in a pot. Add the onion, garlic, mushrooms, peppers.

Turn oven to 350

Cook over low heat for 15 minutes.

Put the sauce in a baking dish. Place chicken in dish. Cook for 30 minutes. Add mozzarella cheese on top. Cook pasta. Cook chicken10 minutes more to melt the cheese

Serve with pasta and bread
