1/4 cup olive oil
1 large onion,chopped
1 med eggplant(unpeeled) cut into 1/2 " cubes
2 small zucchini,diced
1 red bell pepper,chopped
3 garlic cloves, chopped
1/2 tsp. salt


2 tomatoes,peeled,seeded and chopped
2tbl. drained capers
1/2 tsp.fresh ground pepper
2 Tbl. chopped fresh basil

1 French bread baguette,cut into 1/2" thick slices
1/12 cups grated provolone or mozzarella cheese(about 6 oz.)

Directions:
Heat oil in heavy,large skillet over medium heat. Add onion and cook until beginning to soften,about 3 minutes. Add eggplant, zucchini,bell pepper,garlic and salt. Cook 5 minutes,stirring frequently. Reduce heat,cover and simmer until vegetables are tender, stirring occasionally for 30 minutes.

Add tomatoes ,capers and pepper to vegetables. Simmer uncovered until most of liquid evaporates and mixture thickens,stirring frequently,about 15 minutes. Stir in basil. Adjust seasonings.(Can be prepared 3 days ahead. Cover and refrigerate).

Spread on baguette.to[ woth cheese; stick under broiler till cheese melts. Serve.

I was originally going to place this in the "bread" section of the cookbook but it specifically has "appetizer" written on it so I didn't want to change that. It comes from Barbecue magazine. They are described as being like a "bruschetta".
