1/4 cup butter
1 med. onion,chopped
1/2 cup diced celery
1 can (4 oz.) sliced mushrooms, drained well
2 cups soft bread crumbs
1/2-1tsp salt
1/8 tsp. pepper
1/2 tsp. basil leaves
1/8tsp. parlsey flakes
3 lb. Beef Tenderloin
4 slices bacon

Melt butter in a small skillet over low heat. Saute onion,celery,mushrooms until onion is transparent,about 10 min.

Place bread crumbs in a quart bowl. Mix in the spices. Pour in butter and onion mixture. Lightly mix until blended.
Make a lengthwise cut 3/4 throughb tenderloin. Place stuffing in the pocket and fasten with toothpicks. Place bacon strips across top. Place in glass dish 350ºF. for 1 hour- medium rare.
