3 large garlic cloves
3 serrano chilies,(very hot) stemmed
4large green onions,trimmed and cut into 1" pieces
1 bunch(1/2 cup) cilantro leaves
4 1/2 Tbl. fresh lime juice
1/4 cup fish sauce(nuoc mam or nam pla)
2 Tbl. sugar
1/4 tsp. salt

1 3 1/2 lb. sirloin steak,(about 1 1/4 " thick) fat trimmed

For marinde; Insert stee knife into food processor. With machine running,drop garlic and chilies through feed tube and process until finely minced. Scrape down sides of workbowl. Add green onions and cilantro and process until minced. Add lime juice,fish saice,sugar and 1/4 tsp. salt and blend.

Transfer marinade to large plastic bag. Add steak. Seal bag tightly , Turn over several times to coat steak. Refrigerate overnight,turning occasionally.

Prepare Barbecue-high heat. Drain steak,reserving marinade. Season both sides of steak with salt. Grill to desired degree of doneness,about 4 min. per side for medium rare. Meanwhile, gently warm marinade in saucepan over medium heat.

Remove steak from grill. Cut into 1/4" thick slices. Place on warm platter. Brush with marinade.

Recipe notes suggestlime slices and fresh cilantri sprigs as a garnish. I love cilantro but not everyone does. Use sparingly.
