1 yellow cake mix
1 can pineapple slices, drain juices and reserve
1 sm bottle (about 10-12) maraschino cherries
1/2 cup butter
1 cup brown sugar

12” Cast Iron Skillet or 9x13” cake pan

Directions:
Directions:
Preheat oven to 350 degrees.
Melt butter in bottom of cast iron pan. Add sugar and stir until moistened. Set aside. (if using a 9x13” pan (glass or metal) - melt in oven or melt butter in microwave and then mix with sugar in the pan.
Place pineapple slices in pan - place cherries in the center of each ring.
Prepare cake mix according to directions, substituting the pineapple juice for the water on the cake mix.
Gently pour cake mix over the pineapple slices in pan. spread with a spatula until evenly covered.
Bake 30-35 minutes until center springs bake - or toothpick comes out clean.

Remove from oven - and immediately cover with heat proof serving plate or pan. Flip over and leave covered for a few minutes to allow caramelized sugar to drain into cake. Remove pan from top and allow to cool. Cut and serve (app 9-12 portions).
