1 lb bacon
3 onions chopped fine
1 stalk celery chopped fine
48 oysters (8 per person)
1 quart milk (simmer)
pinch of tapioca powder
dash saffron

Directions:
Directions:
Use a large pot for this stew. Fry bacon crisp and set aside to drain. Simmer milk. Saute vegetables in bacon grease. Drain oysters. Toss in vegetables. Let brown lightly to implant flavor. Pour oyster liquid over all. Cook until oysters wrinkle. Sprinkle tapioca powder to thicken milk. Pour oyster stew into milk. Crumble crisp bacon over all. Dust saffron over stew. Add 1 tbsp. butter.
