3/4 C ground Turkey
1 1/2 Tbsp Cumin
1 tsp salt
1 can crushed tomatoes (28oz)
1 can black beans (15.25oz), rinsed and drained
1 can (15.25oz) sweet corn, drained
3 C Jasmine Rice, cooked
8 fresh Sweet Red Peppers
1 C reduced fat Colby Jack Cheese
2 green onions, sliced

350º 40-50 minutes

Wash red peppers and slice the tops off each. Remove the seeds. Stand them up next to one another in a 13X9 inch baking dish

In a large skillet brown the turkey until fully cooked. Drain. To cooked turkey add cumin, salt, tomatoes, black beans, and sweet corn. Simmer 15 minutes.

Meanwhile cook rice according to package directions.

Add cooked rice to skillet with meat mix combining completely. Remove from heat. Fill each pepper with the turkey mixture. Cover dish with foil and bake 40-50 minutes.

Remove foil, top with cheese bake an additional 5 minutes or until cheese is melted. Sprinkle with green onions. Serve.
